COURSE DESCRIPTION

This qualification reflects the role of chefs and cooks who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems. This qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors. The skills in this qualification must be applied in accordance with Commonwealth and State or Territory legislation, Australian standards and industry codes of practice. No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

Vocational Outcomes

Successful completion of the SIT40521 Certificate IV in

Kitchen Management can lead to a range of possible career

opportunities including:

• Chef

• Chef de partie – a station chef or line cook who is in

charge of a particular area of production in the kitchen. For

example:

• Saute chef

• Fish chef

• Grill chef

• Vegetable chef

• Pastry chef

• Sous chef

• Roast chef

• Fry chef

• Pantry chef

Course Structure

The 33 units of competency (27 Core and 6 Electives) are delivered throughout the 78 Weeks (60 weeks of delivery and 18 weeks of holidays/break). All units of competency must be completed to receive a Certificate IV in Kitchen Management qualification.

REQUIREMENTS

The course will be available for those students who completed year 12 or equivalent. All International Students must have an English ability at the IELTS 5.5 or equivalent.
