They work with some independence and under limited supervision and may provide operational advice and support to team members. This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.

That’s why we offer a comprehensive work-based training program that integrates rigorous academic learning with practical workplace experience, forming a core component of our culinary courses.
Work Placement
Our curriculum is designed to ensure that every student gains hands-on experience through a mandatory work placement component, which involves a minimum of 48 complete food service periods (shifts). These placements are hosted by a diverse array of hospitality and catering organisations, including upscale restaurants, restaurants/cafes, healthcare establishments, and more.
Students are encouraged and supported to select their own work placements, empowering them to steer their learning journey according to their career aspirations and interests. Whether it’s a cafe, a large catering event, or even onboard catering services, our students have the flexibility to explore various sectors within the industry.
SITHCCC043 Work effectively as a cook
Please note that this unit, SITHCCC043 Work effectively as a cook, includes a compulsory work placement component. During this placement, you must have the opportunity to engage in the following activities:

Complete a minimum of 48 service periods in a commercial kitchen, covering breakfast, dinner, and lunch
•
Cook and present items for various menu styles, including à la carte, set menu, buffet, and cyclical.
•
Prepare and serve items from a diverse range of food types, ensuring they meet industry and organisational quality standards.
While students have the flexibility to choose their work placement, it is imperative that the selected placement meets all the criteria outlined above and approved by GCA.
REQUIREMENTS
Minimum of 18 years of age.
Successful completion of Year 10 or equivalent.
GCA English test upon enrolment into the first course.
