COURSE DESCRIPTION

Graceland Institute’s SIT40521 Certificate IV in Kitchen Management (Formally Certificate IV in Commercial Cookery) has been designed to allow students the ability to gain real life experience whilst completing their studies within the Hospitality (Kitchen) Management Industry

Students will be introduced to the following main learning areas within this qualification:

Safe food handling techniques
Correct food preparation
Correct equipment operations
Planning and costing menus
Preparing dishes i.e. meat, seafood, poultry, vegetarian, stocks, sauces and soups

Education Pathway

After successful completion of the dual program, students are eligible to enter into the

Advance Diploma of Hospitality Management and/or directly into a Bachelor of Hotel Management.

REQUIREMENTS

Candidates seeking to enrol into this course must be 18yrs or older and have completed year 10 or equivalent,

hold a current Australian visa with no study limitation condition and have access to a computer and internet for the online learning and assessment activities submission

have a minimum IELTS level of 5.5 or equivalent, suitable applicants can demonstrate English language ability if

you have completed at least 5 years’ study in English in one or more of the following countries: Australia, UK, USA, Canada, New Zealand, South Africa, or the Republic of Ireland; or

in the 2 years before applying to study with Graceland Institute, you completed, in Australia and in the English language, either the Senior Secondary Certificate of Education or a substantial component of a course leading to a qualification from the Australian Qualifications Framework at the Certificate IV or higher level; or

Successfully complete an English Placement Test (LLN)
